Phantom Forest Eco Reserve - Knysna - Garden Route
Arrived at Gatehouse - met by 'Bush-Butler' Wilfred - speaks 7 languages! Transferred to Bush vehicle - our Phantom adventure has begun!...

We heard a Fish Eagle cry, and a door softly closed...the door of a rushed & noisy world.

What bliss...to be at one with Nature in all her glory - sounds, scents, the glory of a Knysna Loerie in flight - the fleeting glimpse of the shy Bushbuck....the heart stopping sunsets...
the symphony of birdsong greeting the African dawn...to bathe in total privacy while gazing in wonder at the night sky...

...to savour the tastes of Africa in the Boma - layer upon layer...this is indeed food for the soul...
Phantom Forest Eco Reserve - Activities
"Shall I wonder thru' the timeless forest and dream of times gone by, ....or shall I canoe up the Knysna River where the Malachite Kingfisher flashes her turquoise plumage...
..be energetic and explore the surrounding area...or...or shall I pamper myself with an aromatherapy massage...or shall I just lie by the pool and read...
perhaps I shall settle on a delectable picnic in a secret place."

Enjoy a brisk day's sailing
Paragliding off the coast at Brenton
Horseriding with Cherie around the Lakes at Sedgefield
Golfing at Sparrebosch on the Eastern Heads

Phantom Forest Eco Reserve - Dining
Vanie developed an early passion for food by her parents' side in her home kitchen in Durban. Spices, scents, exotic flavours and colours were the order of the day, with long preparation and loving presentation, a meal at home was a feast for the senses. Freshness of ingredients and condiments are the essential base for Vanie's delectable dishes, whilst seeking growers with organic ethics.

Asparagus, black forest ham and fig salad with truffle vinaigrette
Vanie is a great inspiration to wannabe chefs. The phrase "culinary art" is truly applicable to Vanie's cooking. "Today's cuisine is so inspiring" says Vanie, "light and fun with exciting combination of flavours bursting on the palate, takes you on a spriritual journey to all corners of the world. Phantom Forest has become a playground for me, with carte blanche to present any dish and changing the whole menu each evening, every day has swings, roundabouts, and slides to push my creative energy, even with the odd thieving Vervet monkey to chase out of my kitchen."
